I Got That Summer Time, Summer Time Salads

See what ingredients I have been adding to my salads to create a different meal for 3 different nights!

Salads have been an every night go to lately with the summer heat. Not only are they healthy, but they are easy to prepare; making them a BIG win in our household!

 

Here are my 5 go to 'add on's' to evolve salads:

chopped red cabbage for added crunch
pickled red onion for a little tangy

Thick salsa for a little heat and moisture
Tabouli salad and hummus for freshness
 

1. Home made pickled red onion adds a tangy element with a slight crunch.

2. Chopped red cabbage transforms your salad by adding a huge crunch.

3. Tabouli salad for some freshness, small crunch from the couscous, and a ton of freshness from the herbs.

4. Hummus to add volume, creaminess and falvor without the added calories of processed dressings.

5. Salsa for some heat, and moisture

The typical BASE:

  • spring mix w/ baby spinach + chopped romaine

Dinner Option 1: Bitter Sweet

Base+ Arugala+ pickled onion+ whole boiled egg+ toasted walnuts+ chopped 1/2 apple +1 slice chopped bacon

Dress with balsamic vinegar or low cal Zinfandel vinaigrette

Dinner Option 2: Mexican Inspo

Base+ chopped red cabbage+ salsa+avocado+ roasted corn+ black beans + raw bell peppers+ fresh lime juice

Add some protein, like seasoned ground beef/ turkey or grilled chicken

Dinner option 3: Mediterranean Inspo

Base+ arugula+ tabouli salad+ hummus+ chopped red cabbage + pickled red onion +

chopped tomato+

fresh lemon juice

Dress with Greek style vinaigrette if needed. Hell add some protein, too!
