Show A Little Love To Your Breakfast

This is an easy + healthy Valentine's day breakfast that you can whip up for your partner, kiddo, bestie, or the most special Valentine...yourself!!!

Strawberry Coconut Oat Pancake

 

All you need is:

-1/2 C rolled oats, divided

- 4 chopped strawberries, divided

- 2 TBSP of shaved sweetened coconut, divided

- 1/2 of a banana mashed

- 1 TBSP of chia seeds

- 1 whole egg

- 1/4 cup of almond milk

- 1 TBSP chocolate chips (optional)

- Cinnamon to taste (I like a lot!)

Directions:

1. Combine 1/4c of the oats, 2 strawberries, 1 TBSP coconut, chia seeds, cinnamon, milk, and mashed banana in a small bowl. Heat in microwave to cook this portion of the oats, approximately 1 minute.

2. Add in the rest of the raw oats, and stir in egg and pour into a non stick pan. Heat on low. (This is a thick pancake and will take a while to cook, keep the heat on low to avoid burning on one side.)

3. Throw in chocolate chips before you flip the pancake.

4. Remove from heat. When plated, sprinkle the rest of your coconut flakes, and chopped strawberries on top.
