Feeling uninspired with dinner ideas!? Ya girl, me too!!
We all get into our ruts and have our favorite go to's! Here is something you will impress your family with! This recipe has super fast cook time + easy clean up, making this a new go to for me and my family!
This recipe was inspired by an IG friend S/O to Felicia P!!
Here's how I got it done!
Ingredients:
- 1 lb of fresh, raw shrimp. Peeled + deveined
- 1 package of sweet potato noodles, I found some at Wegmans, but I have also seen them at Whole Foods, too.
- 1 TBSP of cinnamon
- 1Tsp of Cayenne pepper
- 1 TBSP of garlic powder
- 1 Tsp of paprika
- Salt and pepper to taste
Directions: Well, first....Preheat your oven to 375 ( I always forget this step)
1. Add all of your dry spices into a small dish, mix well
2. Pat dry your shrimp, in a small bowl combine your raw shrimp and generously sprinkle with your dry seasoning mixture until all shrimps are shown love
3. Loosen up your sweet potato noodles, they're tightly packaged. They are stiff, yet delicate.
4. Individually wrap each shrimp with your sweet potato noodles. I learned they break easily, so work gently. (it's slightly time consuming)
5. I sprinkled the wrapped shrimp with cinnamon and salt (I love a sweet and salty combo)
5. Bake on baking rack (to get evenly crisp) for 25 minutes.

I paired the shrimp with steamed green beans tossed in some olive oil and garlic salt and pepper and a warm home made "slaw". Click for recipe
This was a FABULOUS, quick + healthy meal that my husband enjoyed, too!
