A Little Treat For You + Your Littles


Spinach Blueberry Mini Muffin Snacks

Two great things about this recipe:

1) Its a versatile snack; it can be breakfast, or served as a side for lunch or dinner. It is made with spinach after all! :)

2) You will enjoy it too!

Ingredients:

-1 banana

-1 cup of oats (any will do)

- 1 whole egg

-1/2c blueberries

-couple handfuls or raw baby spinach

- 1/4 cup cashew milk (any milk will do)

- A few dark chocolate chips (reserved)

- a sprinkle or 2 of cinnamon

- a dash of stevia extract

Directions:

1. Preheat oven to 350

2. Spray muffin pan with non-stick spray

3. In a food processor, blend 1c of oats, into oat flour ( a few pulses should do)

4. Add the rest of the ingredients and blend in the food processor until smooth

5. Add a touch of water if needed to loosen texture

6. Pour mixture into greased muffin tins

7. Drop a few dark chocolate chips in each muffin

8. Bake on 350 for 17-20 minutes

This recipe yields 6 muffins

(although Mia got to one before I could get a picture)

They are always a hit with The Girl!
