Baked coconut shrimp is a great option, for so many reasons!
1) Shrimp is a quick thaw!
Anyone else drive to work and think, "awww shit, I forgot to take out _______ from the freezer for dinner tonight. (At least once a week occurrence, for me!)
Luckily, with shrimp, you can thaw them out rather quickly to make for dinner that night!
2) Shrimp is a lean protein source
3) If bought fresh, it freezes well.
4) Its a versatile protein
It can be morphed into just about any flavor or style meal.
Tonight's menu included...
Baked Coconut Shrimp with a Wilted Kale Lazy Salad.

Ingredients for Baked Coconut Shrimp:

1 lb of raw fresh shrimp (I avoid farm raised for my own reasons)
1/2 c coconut milk
1 whole egg
1/4 coconut flour
1 c shredded unsweetened coconut shreds
Dashes of paprika, garlic powered salt and pepper to taste
Directions:
Set oven at 425 degrees.
1. Beat egg and coconut milk in a small shallow bowl
2. Peel and devein shrimp, pat dry
3. Season shrimp with paprika, salt, pepper and garlic powder
4. Dredge seasoned shrimp in coconut flour
5. Drip dredged shrimp in coconut milk + egg mixture
6. Roll/coat shrimp in coconut shreds
7. Place coated shrimp on sprayed baking sheet and bake for 15-18 minutes

(my husband is a big dip guy), we add this low calorie sweet chili sauce on the side!

Sure, I'll share but only because I like you...
Here's How:
In a small sauté pan coat with 1tsp of olive oil and 1 piece of bacon. (YES! I SAID BACON). Pan fry the bacon and remove. Add a few heaping handfuls of freshly chopped kale, cherry tomatoes and red onion.
Saute kale for 2 mins until warm and slightly wilted.Then chop the cooked piece of bacon and toss before plating.
The saltiness from the bacon is the right touch, to season the kale perfectly. I call this a lazy salad because it doesn't require much effort! Its a perfect pairing for just about any lonely protein!
I choose to make nutritious + balanced food choices over food restriction, any day!
