FACT:
Having your meals prepared for the week makes for an all around better week!
Here is an easy salad that can be prepped on advance on a Sunday for the 5 work days.
Below are the ingredients for 5 salads
Ingredients:
-2 Roasted Beets (cut into small cubes)
- 1 pickled red onion (see below)
- 3/4 c pistachios or shaved almonds
-1/2 cup Golden raisins
- 1/2 head of red cabbage (shredded using mandolin slicer makes it super easy)
- 1/2 container of multi colored cherry tomoto
- 2 whole eggs chopped
- 1 Pack of organic mixed baby greens (think Olivia's square box)
- 1/2 pack organic baby arugula
-Diced cucumbers (optional)
Dressing: Dijon Honey Vinaigrette
1/4 cup olive oil
1 whole shallot
1/4 cup champagne vinegar
2 tablespoons of raw honey
2 tablespoons Dijon mustard
dash of water
salt and pepper to taste
(Pulse all ingredients in a food processor until smooth... Yum!!)
Quick Pickle for red onion
1/2 cup of white vinegar
2 tbsp agave
1 tsp salt
pepper corns (to taste)
1 cup of water
1. Combine in a smal sauce pot, bring to a boil
2. Add sliced onions and boil for 10 minutes.
Set aside to cool before placing on salad.
Meal Prep Directions:
1) Line up 5 Tupperware containers or 5 mason jars on your counter
2) Include each of the above ingredients evenly into each container
3) Store dressing in a small (PORTIONED OUT) container, approximately 2 tbsp
4) Add your favorite protein (OR Not!)
5) Store in the fridge
